Simple 5,6,7,8 Butter Cake

Oh… what is this 5,6,7,8 Butter Cake? Hide and seek game? Counting my dancing steps to the beat of the cake mixer? Hahaha….
It’s actually referring to these few basic ingredients measurement of butter cake ~ eggs, sugar, flour and butter respectively. You can even sing it to the melody of 10 little Indians Boys! 5 eggs, 6 sugar, 7 flour, 8 butter… Easy to remember right? So, with this 5,6,7,8 melody, you will not miss the measurement, but… be careful, it’s 5 eggs, 6 sugar, 7 flour, 8 butter and NOT 5 butter, 6 eggs, 7 sugar, 8 flour!!!!!
Well, after my first attempt in Steamed Chocolate Cake, I am tempted to try another cake. Again, Amelia is my teacher and she generously gives me this 5,6,7,8 butter cake recipe. KAM SIAH, KAM SIAH, Amelia dear.
Surprisingly again, this butter cake is a success even though it cracked at the top, partly due to oven temperature, too hot, I guess.....
However, the texture is very cottony soft. It’s fluffy but neither moist nor dry. It should be slightly moist, right? Well, never mind, I am sure I can get it right in my next attempt, hehehe…..Overall, to me this cake is a success and I am already happy with my newly acquired baking skills, ahem….(blushing).

Ingredients :
5 eggs
6 oz sugar
7 oz self rising flour
8 oz butter (softened)
1 tsp vanilla
1 tbsp milk power (mixed with 2 to 3 tbsp water)

Method :
1) Preheat oven at 180 deg c for 10 minutes
2) Grease an 8" cake pan.
3) Cream butter and sugar until light and fluffy.
4) Add egg one at a time until well blend.
5) Add flour in batches then add vanilla and milk.
6) Pour in mixture into greased pan. Bake at 180 deg c for 45 minutes or until done.
7) Stand in pan for 10 minutes then turn out onto a wire rack to cool.
8) Serve.


It's heaven to have this slice of cottony soft butter cake with a cup of coffee or tea

  5. Wah! Clap...clap....clap!!! Ivy, this is progress! Another cake and it is a lovely butter cake. Yes, I can see that the texture is fluffy and tender. I have just baked a cake and it also cracked hah..hah...but what matters most is the taste. If you feel like it, you can try the Mrs SK Ng butter cake next time. That one does not crack. Well done, Ivy. Double high five. Piak! Piak!

  11. Hi Ivy, your butter cake has a very nice texture. Reminds me of the type sold at most coffee shops in the 60s and 70s where you can get a slice of it wrap in plastic. Must find time to bake one, hope I can remember the sequence correctly, hehehe!

  13. Hello Ivy, I when a bachelor treasured my freedom, making many women happy instead of one. As well eat to live, not live to eat.
    And apart from on and off enjoying my mom's cooking and baking, lots of foodcourt stall bosses knew me well, all over the country as well out of country too.

    But unknown to me, a lovely lady had decided to handcuff me, permanently! She secretly found out my favourite food dishes and cakes.Three of my favourite cakes are Sugee, fruitcake and....Butter cake. And thus I can say, a butter cake assisted in drawing down the curtains on my carefree days. I lost my Bachelors degree, a beautiful lady acquiring her Masters!

    And Ivy, your attempts at making this butter cake as well previous ones I can see your patience, dedication and love, and I can say with all confidence, it won't be long you acquiring a Black belt in baking, then a P.hd.
    Your this butter cake is simply fabulous...looking at it, I can practically get the wondrous scent. If a neighbour would sure sit near the window.

    And your this beautiful, finger licking cake can end any bachelor's freedom, or husbands giving a tight embrace 'thank you'.

    1. Thanks Shane for your ever sweet and motivation words. My family members love butter cakes too and hubby commented that this butter cake is better than the commercial ones. He is not going to buy any butter cakes for us, instead, will stock up on the butter so that whenever we feel like having butter cake, there's always some butter ever ready in the fridge!

    Wait a minute, I'm imagining you singing, lol...I've actually heard of 1, 2, 3, Cake but I don't recall 5, 6, 7, 8, Cake. The principle is pretty much the same:) Since I have never actually made it that I can remember, I'm going to just dream about your fluffy 5, 6, 7, 8, Butter Cake and just keep on singing:) It looks delicious, Ivy and I really, really would love just a taste:)

  29. Hi dear Ivy, thank you for your kind mentioned. No problem, you're always welcome. Your cake look extremely good, the texture is just right, soft and moist.

    The crack on the cake could be due to oven temperature too hot, over folding of cake batter or batter too watery. Next time try to reduce the oven temperature first and see if it still crack. Need lot of practice to get it right.. Overall you did a good job. Keep it, happy baking.
