Easy Kapitan Chicken Curry

This is a very easy curry dish using instant paste.  To me, the curry paste is not too spicy and suitable for kids who are learning to take spicy food.  As I like my curry to be spicier, so this time I added some homemade chili paste to it and the spiciness is just right for my children too.  If you don't have time to pound all the spices yourself,  then try using instant curry paste.  This time, I used Seri Murni.  You can use any of your preferred brand.

Ingredients :
- 1/2 free range chicken (washed and cut into bite sized)
- 1 packet of instant Kapitan Curry Paste (any brand)
- 2 stalks lemongrass (washed and cut into your preferred length)
- 1 cup coconut milk (I used Ayam brand coconut milk)
- 3 tbsp Homemade Chili Paste (optional)

Seasonings : (to taste)
- salt

Method :
 1)  Heat up some cooking oil in a wok or pan.  Add kapitan curry paste, lemongrass and chili paste.  Stir fry over medium heat until aromatic.
2)  Then add chicken and continue stirring for about 10 minutes.
3)  Add water.  Stir and mix well.
4)  Simmer for about 30 minutes or until the chicken is cooked over low heat.
5)  Lastly, add coconut milk, stir and mix well.
5)  Add salt to taste.  Serve hot with steamed rice or bread.

Healthy and Nutritious Burdock Root (Gobo, 牛蒡 niúbàng) Chicken Soup


Burdock Root contains a number of medicinal properties that have been used for hundreds of years. Traditionally herbalists all over the world use Burdock Root as a blood purifier. It is the root of the Burdock plant that is harvested for medicinal use.

A recent study showed that Burdock blocked dangerous chemicals from causing damage to cells, suggesting to the possibility that burdock may help decrease the risk of developing cancer from toxic chemicals.

Burdock Root can be prepared in anyway you like.  If you like it with chicken soup, then this is one simple and nutritious soup you can give it a try.


Ingredients :
- 1 free range chicken (washed, cut and blanched)
- half stick of burdock root (washed and brushed, cut)
- 2 honey dates (washed)
-  some red dates (washed)
-  some Chinese wolfberries or kei qi (washed)
- 4 dried longan (washed)

Method :
1)  In a pot, boil enough water for the soup.
2)  When the water starts to boil, put all the ingredients in.
3)  Boil at high heat for 15 minutes and then reduce the heat to low.
4)  Continue to simmer for about 2 hours.  
5)  Season with sea salt.  Serve hot.

Refreshing Old Cucumber Soup (老黄瓜汤)

Old cucumber soup is one of our favourite soups. The soup is clear and very soothing.  Old cucumber is actually matured cucumber which has brownish skin. It is said that the older the cucumber is, the better it tastes! Old cucumber is not only cooling for hot weather but is also good for our complexion. and even helps to prevent aging! Now that's enough reason for us to have old cucumber soup as often as possible! 

Old cucumber is usually used for soup and there are variety of soups you can try depending on your preferences.  For a start, this is a very simple soothing soup with minimal ingredients and almost every Chinese knows how to cook it.  No doubt it is very simple, it is very refreshing and yummy too..... :)

Ingredients :
- half free range chicken (cut and blanched)
- 1 large old cucumber (skin thoroughly scrubbed and washed, de-seeded and cut into chunks)
- 1/2 (or less) stalk ta tau choy (salted mustard green) (soaked and cut)-do soak longer as it can be very salty
- enough water for the soup

Method :
1) Boil enough water in a big pot.  When water started boiling, put in all the ingredients.
2)  Boil at high heat for 10 minutes and lower the heat to medium low.
3)  Simmer for about 1 to 1 1/2 hours
4)  Add salt to taste and serve hot.

Ayam Masak Merah (Spicy Chicken with Tomato Gravy)

Ayam masak merah is a very delicious dish.  I would usually use instant paste as it is easy and fast to prepare.  However, this time I decided to follow all the necessary steps when I saw the recipe from Wendy at Johor Food Fest hosted by Annie, with some minor modification.
Ingredients :
- half chicken cut into bite pieces (marinated with turmeric, pepper and salt, set aside for about 30 minutes
- 3 red chilies
- 1 thumbsized ginger
- 1 whole garlic
- 4 shallots
- 1 red onion (sliced)
- 2 tomatoes (finely chopped)
- 1 cinnamon stick
- 3 cloves (bunga cengkih)
- 3 cardamoms (buah pelaga)

- 1/2 cup tomato ketchup
- 1/2 cup santan (coconut milk)
-1/2 cup canned green peas
- salt (to taste)
- sugar (to taste)

-cooking oil

Method :
1)  Blend shallots, chilies, ginger and garlic.
2)  Heat oil in a wok and pan fry marinated chicken until golden brown.  It is ok if the chicken is not cooked.
3)  Dish up and set aside.
4)  Leave about 2 - 3 tbsp of oil in the wok.  
4)  Lower the heat to medium and saute the blended ingredients until glossy.
5)  Put in cinnamon, cardamom, cloves and sliced onions.  Keep stirring until the onions is translucent and soft.
6)  Put in tomato ketchup, chopped tomatoes and coconut milk.  Stir and mix well.
7)  Return the fried chicken to the wok and cook until the gravy is reduced and thickened.
8)  Lastly add the green peas, salt and sugar.  Let it simmer for a while and it is ready to be served.
Serve hot with rice.

Simple Stir Fried Steamed Chicken with Soy Sauce

Don't know what to do with the left over steamed chicken?  

Well, this is a very common and yummy stir fried steamed chicken with soy sauce.  It is very fragrant especially when you add generous amount of ginger, onions and garlic.  My children love this dish so much and especially the yummylicious gravy!

It is so simple!  

Saute ginger, onions and garlic until aromatic.  Then, stir fry pieces of  steamed chicken with soy sauce, dark caramel sauce, salt and some sugar to taste. Add more water and you won't regret as the gravy is really great to go with rice!  Lastly, if you prefer, drizzle some Chinese cooking wine before dish out for serving.  Some like to add some shredded chili.  So yummyyy.......!!!

Serve it with bird's eye chili soy sauce (kicap cili padi).

Super Easy Homecooked Kentucky Fried Chicken

Do you, at times, crave for fried chicken but do not want to get it from elsewhere except your own homecook?  Well, you can have a quick and yummy fried chicken and no need to fuss over what ingredients or seasonings to use.

What I did was to get a box of Kentucky all purpose seasoned flour.
Coat and mix well the chicken pieces with all purpose seasoned flour. 
Deep fry till golden brown.
Dish out and drain away excess oil.
And here is your finger licking good Kentucky fried chicken straight from your kitchen!  Enjoy it with your favourite chili sauce or tomato sauce right in front of your home tv.  Or enjoy it with your favourite novel (that's me!)  Super easy, isn't it?

White Radish (Daikon) with Chicken Soup

White radish or daikon is an excellent source of potassium, folate, vitamin C and also magnesium.  Besides it is believed to stimulate appetite, treat liver and gallbladder problems, and improves bowel movement.  It is also good for sore throat, digestion and expel phlegm . However, a word of caution. Chinese believe that you are not supposed to take white radish if you are on medication or herbal tonic as white radish neutralises the efficacy of any medicine or health tonics.  So whatever health supplement you take would go down the drain!
Here is a common and simple white radish soup that we used to cook. It is common to add dried cuttlefish to the soup. However, I prefer a simple and healthier soup minus the dried cuttlefish.

Ingredients :
- 2 white radish (washed, peeled and cut into chunks)
- Carrots (optional; sometimes I add carrots)
- 1/2 chicken (cleaned, cut and blanched)
- some dried mushrooms (washed, soaked and cut into halves.  This time I used the stems only which I used to collect and store in the freezer)
- 8 to 10 red dates
- 1 tbsp Chinese wolfberries (kei qi)
- salt (to taste)
Method :
1)  Fill pot with enough water for the soup.  Add white radish, mushrooms and red dates.  Boil at high heat.
2)  When the water started to boil, add chicken and boil at high heat for about 15 minutes.  Then, lower the heat and continue to boil for 1 hour.
3)  Add kei qi and boil at low heat for another 1/2 or 1 hour.
4)  Season with salt and serve hot.

Simple Steamed Chicken with Chinese Sausage (lap cheong)


This is a simple and delicious dish.  



Ingredients :
- 2 whole chicken thighs (washed and cut into bite sized and marinated)
-  2 Chinese sausages (removed the casing/peel and sliced)

Marinate : (to taste) There is no exact measurement in my recipe as I cooked according to our taste
- ginger juice
- garlic (finely chopped)
- soy sauce
- salt
- homemade red glutinous wine/rice wine
Method :
1)  Marinate the chicken for 30 minutes or more.
2)  Add Chinese sausage on top of the chicken.
3)  Steam at high heat until chicken is cooked.  As I used free ranged chicken, it took longer to cook,  about 25 minutes.
4)  Serve hot with steamed rice.  The gravy itself is so yummy with rice.
