Fish Fillet in Sour Orange Gravy

 
Earlier, I had posted Sweet Fragrant Rosemary Salmon and I used orange juice for the gravy.  Surprisingly it was very delish.  My kids complained that they couldn't really see the gravy as it had all dried up.  I still remember I used 3 oranges for the juice as the oranges were quite small.  

So, this time I use orange juice for fish fillet as my girls have been pestering me to cook fish with orange juice gravy and they specifically requested for more gravy!  Instead of using salmon, I used treadfin fillet (ikan kurau). Coincidentally, I spotted this recipe from YumYum 44, page 9!  
Look at the gravy! Tempting isn't it?  It was all gone in seconds! If you prefer lesser gravy or a more crystallized gravy, reduce the orange juice and simmer the gravy until it's almost dried or crystallized, just as I did it in my previous post on Sweet Fragrant Rosemary Salmon.

Recipe sourced from YumYum 44, page 9.

Ingredients :
- 2 pieces of ikan kurau fillet (marinated with salt)
- few slices of ginger
- 2 oranges (take the juice and the pulp)
- 1/2 lemon juice
- 1 tbsp shredded lemon rind
- oil for frying

Seasonings : (to taste)
- salt
- 2 tbsp sugar

Method :
1)  Heat oil in a wok and deep fry fish until golden brown on both sides.  Dish up and set aside.
2)  Leave 1 tbsp of oil in the wok.  Saute ginger until fragrant.
3)  Then add in orange juice, lemon juice, seasonings and bring to boil.
4)  Lower the heat and add in the fried fish and shredded lemon rind.
5)  Simmer for 10 minutes or until the gravy is thickened or crystallized, depending on your preference.
6)  Serve with steamed rice.
The tangy sweet sourish gravy is very appetizing and yummy :)
Do adjust the flavour and thickness of the gravy according to your taste.
Most kids love this gravy.  Do give this a try :)

Fragrant Mixed Spices Salmon

This is another one of my salmon recipes.  This time, I tried to mix spices to this pan-fried salmon.  Different from my usual Sweet Fragrant Rosemary SalmonPan-Fried Salmon with Fennel and Coriander Powder or Simple Pan-Fried Salmon with Dried Basil.  As usual, I used Happy Call Pan too.

Ingredients :
- 2 pcs of salmon fillet (marinated)
- 2 tbsp ginger juice (juiced it from the grated ginger)
- some curry leaves
- some finely chopped lemongrass
- a dash of curry powder
- 3 cardamon pods (buah pelaga)
- soy sauce

- butter (enough for pan fry)

Marinate : (to taste)
- 1 tbsp finely chopped lemongrass
- 1 tbsp grated ginger
- a dash of ground cumin (jintan putih)
- salt

Method :
1)  Marinate the fish for at least 1/2 hour. 
2)  Melt butter in a pan.  Saute some lemongrass, curry leaves and cardamon pods until fragrant.
3)  Add salmon fillets and close the lid (I used Happy Call Pan).  Pan fry until both sides are slightly brown.
4)  Sprinkle some curry powder on both sides.
5)  Turn off the heat.  Season with ginger juice and soy sauce on both sides
6)  Serve hot.
The aroma of ginger and lemongrass is really great!

Easy Long Beans Sardine Curry (suitable for kids learning to take spicy food)

After my very first try of  Canned Sardine Curry, my children like it very much and have been urging me to cook canned sardine curry.  So, for this time, I used instant curry paste and guess what?  It's indeed very yummy; even better than the Canned Sardine Curry I cooked previously.  It is also suitable to train children to adapt to any spicy food or curry as it's not that spicy (you can adjust the curry paste according to your taste) and I am sure they will love the gravy.  My children love the gravy very much!  Besides, it is SO EASY to prepare and for those who are busy, this is just perfect as it's quick and easy!
You can add any of your preferred vegetables such as brinjals, long beans, lady's fingers, tofu puff, etc

Ingredients :
- 1 canned sardine
- 1 packet of Instant Fish Curry Paste
- 4 lemongrass (washed and crushed)
- some long beans (cut according to your preferred length)
- 2 tomatoes (cut)
- 2 onions (peeled and cut)
- salt (to taste)
- 1/2 cup water

Method :
1)  Saute curry paste, onions and lemongrass in a wok or pot. (However, that day I was in a hurry and wanted everything to be quick, what I did was put everything into a pot and let it cooked!)
2)  Then add canned sardine, tomatoes and water.
3) Cover and let it boil over medium high heat for about 3 minutes.
4)  Lastly add long beans and salt to taste.  Let it simmer for another 5 minutes over low heat.
5)  Serve with steamed rice or  bread
Isn't it easy peasy?
Also train your kids to get used to spicy food with this simple dish :)

Penang Nyonya Sweet and Sour Fish

I was goggling for a simple Penang fish recipe and I found this from Rasa Malaysia, Penang Nyonya Cooking.  Eh... to my surprise, this is a Penang dish and  this steamed sweet sour fish is not new to me and others too.  I used to prepare this steamed fish and sometimes I would just deep fry the fish but use the same sauce.  It is simple and very appetizing. Give this a try if you haven't and you would not regret.  
For deep fried, sometimes I added apples to the sauce and it's yummy.  Will post this fried sweet sour fish soon.

Ingredients :
- 1 whole fish (washed, marinated with salt and pepper)

Sauce (to taste) :
- 1 onion (chopped)
- 1 tomato (chopped)

- 2 red chili (finely chopped/blended)
- 1 tsp preserved soy bean paste (tau cheong)
- 1/2 cup tomato sauce
- 4 tbsp chili sauce
- a dash of apple cider vinegar (or lemon juice)
- a dash of ligh soy sauce
- salt
- a dash of sugar
- water
- 1/2 tsp cornstarch mix with 2 tbsp of water (to thicken the sauce)

Method :
1) Steam the fish until cooked, about 10 to 15 minutes. Remove, discard the water and set aside.
2) To prepare the gravy, heat up 2 tablespoons of oil in a wok. Add onion and chili.  Stir-fry for 1-2 minutes or until soft.
3) Add preserved soy bean paste and stir-fry until fragrant over low heat.
4) Add tomato,chili sauce, tomato sauce, light soy sauce, apple cider vinegar, salt, sugar and water. Bring to a slow boil.
5) Add cornstarch solution and stir quickly for a few more minutes.
6) Pour the gravy over the steamed fish.  Serve with steamed rice.
Guess what?  I had in fact prepared extra gravy as I know my children would love it.  True enough, we finished up all the gravy!
The gravy itself is so appetizing and yummy... :)

Sweet Fragrant Rosemary Salmon

I happened to buy a bunch of Rosemary from Tesco and my intention was to stew chicken with Rosemary and trying my luck to grow this herb from the stems itself.  However, after going through my freezer, I realised I still have 4 slices of salmon!  So, I decided to cook salmon with Rosemary as I don't want to keep the fish in the freezer for too long.  Since I didn't have any lemon on that day,  I just made do with whatever I have; ORANGES!  Wow, it's delicious......
Benefits of Rosemary
Rosemary is used in many culinary dishes and is commonly used to flavor soups, sauces and meats. In addition to being used in cooking, it has also been used as a natural remedy for a variety of ailments over the centuries. 

Benefits of rosemary includes cancer prevention, improved memory, mood elevator, remedy for migraine, pain relief, anti-inflammatory, immune booster, antibacterial, digestive health, hair growth, fresh breath, diuretic properties, respiratory health, liver detoxification, anti-aging, etc.

Precautions
Pregnant women should avoid consuming large amounts of rosemary because it may lead to uterine contractions and miscarriage. People with high blood pressure should not take rosemary because it may raise blood pressure.

Ingredients :
(The ingredients in this pic is for photo shooting purposes only.  I used 3 oranges instead of 1)

- 2 slices of of salmon (washed and marinated)
- 3 Sunkist oranges (use the juice and the pulp only)
- 1 tbsp butter 

Seasonings for Marinate : (to taste)
- salt
- pepper
- garlic (finely chopped)
- 3 sprigs of Rosemary (finely chopped)
Method :
1)  Marinate the salmon fillets with seasonings and set aside for about 20 minutes.
2)  Heat butter in a pan.  I used Happy Call Pan.
3)  Place marinated salmon fillets into the pan.  Close the lid and slow grilled over medium low heat.
4)  Grill until both sides are slightly brown.
5)  Pour half of the orange juice onto the salmon fillets.  Let it pan fry for a while.  Do the same on both sides.
6)  Pan fry until the juice almost crystallised.
7) Serve hot.
Hope you like this simple and healthy salmon.

Note :  If the orange is too sour, you can adjust according to your taste by adding some sugar.  As for me, I like it sour, so no sugar is needed. The amount of orange juice is used  depends on individual's preferences.
