Sweet Fragrant Wheat (Gandum) Porridge

Are you having the same breakfast beverages such as Milo, milk, coffee, tea, etc over and over again?  Instead, why not prepare a healthy breakfast porridge for your family?  It's Wheat Porridge and it's simple and yummy.  In order to have a very sweet aroma of wheat porridge, you need to add lots of pandan leaves (screwpine leaves).  Adding pandan leaves into your wheat porridge is a MUST.  Without it, it's like eating nasi lemak without the sambal!
Ingredients : (depending on individual's preferences and to taste)
- 1 cup wheat (washed and soaked overnight)
- 100ml santan/coconut milk (I used ready packed)
- 2.5 litres water
- 1 bunch of pandan leaves (washed, slit the leaves in the centre and knotted)
- sugar (to taste)
- a dash of salt (to taste)
Method :
1)  Fill water in a pot and add drained wheat.
2)  Boil over high heat for 20 minutes. 
3) Then, lower the heat, add pandan leaves and slow boil for another 1 hour or until the wheat is cooked and expanded.  
3)  Should you need to add extra water in between, be advised to add only hot boiling water.
4)  Add sugar and simmer for a while.
5)  Lastly, add santan and keep stirring.  Season with a dash of salt.
6)  Serve hot.

Refreshing Aloe Vera Barley Drink

This is another simple healthy drink which I used to prepare.  Previously, I had posted a  healthy aloe vera  recipe and my children like it very much.  However, this time it's just a simple and easy but healthy drink suitable for all.

Ingredients :
- 1 cup of cubed aloe vera gel 
- 50g barley (washed)
- honeycomb sugar (to taste)
- some pandan leaves (washed)
- enough water

Method :
1)  Add barley into a medium sized pot filled with water. 
2)  Boil for about 15 minutes. Then lower the heat and let it simmer until barley is soft.
3)  Add honeycomb sugar and pandan leaves.  Continue to simmer for another 10 minutes or until the sugar is dissolved.
4)  Add aloe gel and stir.  Turn off heat.
5)  Serve hot or chilled it before serving.
It's very refreshing especially when served chilled.  Do enjoy :)

Ginger Lemongrass Tea

Haven't been feeling well for the past 2 weeks and at the same time I felt bloated on and off.  It's quite uncomfortable.  Then it crossed my mind that I should make Ginger Lemongrass Tea as this is a very popular natural home remedy for bloating and indigestion.  It is very easy to prepare and delicious too!

Ingredients : (adjust to your taste)
- 16 stalks of lemongrass (take the white stems, washed, slit and crushed)
- 3 thumbsized unpeeled old ginger (washed and crushed)
- some pandan leaves/screwpines (washed and knotted)
- some honeycomb sugar (to taste)
- some lemon juice
- enough water

Method :
1)  Boil all the ingredients (except the pandan leaves and lemon juice) in a pot of water for about 10 minutes.
2)  Then, lower the heat and let it simmer for about 30 minutes.
3)  Add pandan leaves and continue simmer for another 10 minutes.
4)  Serve it with lemon juice.
Note :  For bloating or indigestion, it is advisable to drink it hot.
You can also chill it for a refreshing drink.  
This slice of lemon doesn't look nice because I only realized I need a slice of it for photography after I had squeezed the juice! And it was also the last lemon I had on that day, hehehe...

Telosma Cordata Eucheuma Jelly - The Picnic Game 2013 (1)

I get to know Louise when she commented in my Hot and Spicy Chicken  and Homemade Chili Paste  posts.  Out of curiosity, I visited her blog,  Months of Edible Celebrations and she invited me to play Picnic Game 2013.  This is my first time participating in this Picnic Game.  The rule of the game is each participant is to choose an alphabet and to prepare a dish starting with the chosen alphabet.  Well, I chose the letter T and I am bringing Telosma Cordata Eucheuma Jelly as it's a very healthy dessert. 

Telosma Cordate or Chinese Violet has many benefits which I had mentioned it in my Chinese Violet Omelette post. Besides that, Euchema or Sea Bird's Nest (a type of seaweed) has many benefits too.  I will do another posting on the benefits of Eucheuma soon as I do not want those picnickers to get bored with my grandma's stories!

Well, so I am going on a picnic organised by Louise and other lovely picnickers who have been invited by our sweet lady Louise.  To know more about the game, do please visit her Picnic Game 2013's rules.
I'm going on a picnic and I'm bringing ....
A - Aloo Gobi
B - Blueberry-Cucumber Salsa
C - Crispy Curry Fried Chicken 

E - Eton Mess
M - Ma'moul
Ingredients : (to taste)
- 300gm of soaked Eucheuma (dried Eucheuma has to be rinsed and washed 5 to 6 times.  Then soaked for at least 5 hours.  After that, rinse again for 3 to 4 times.  Then drained)
- a handful of Telosma Cordata (washed and drained)
- some Chinese wolfberries (washed and drained)
- some honeychomb sugar
- 1.5 liter water
Method :
1)  Boil Eucheuma and honeycomb sugar in a pot of water until dissolved. 
2)  Keep stirring.  It takes about 30 to 40 minutes to fully dissolved the seaweed.
3)  Add the Chinese Wolfberries into it and let it cook for another 10 minutes over low heat.  Keep stirring.
4)  Then, add Telosma Cordata into the mixture.
5)  Stir and mix well.  Turn off the heat and let it stand for another 5 minutes.
6)  Transfer the mixture into Jelly moulds or containers.
7)When cold, chill it in the refrigerator overnight.  
8)  Remove it from the mould.
9)  Serve chilled.
It's so refreshing and yummy!
Healthy and Nutritious too :)

Natural Cure and Relief for Cough & Sore Throat

With the current heat wave and extreme hot weather in Malaysia, we are advised to reduce outdoor strenuous activities and stay indoor.  It is advisable to drink plenty of water to prevent any illnesses.  Besides water, any refreshing dessert is also recommended.  One of the desserts which I used to make for my family is Steamed Orange.  Besides refreshing and good for body heatiness, Steamed Orange is also a grandma home remedy for cough and sore throat which is quite well-known among the locals in Malaysia. It is delicious too!
For a start, you need a fresh orange.  I used Sunkist orange.  

 
Wash it thoroughly.
Cut off the top part of the orange.  Do not discard the top part.
Use a small knife to make a small hole enough for the salt.


 

Add 1/2 tsb of salt into the hole.  I used sea salt.
Cover the top part of the orange.  Use a toothpick to hold the orange together.  Place it in a small bowl.
Steam it for 15 to 20 minutes depending on the fire.  You will know that it is ready when the fragrant of the orange fills your kitchen.
The steamed orange is ready.
Look at the juice!  So tempting!
Eat the flesh and the juice.  You will love it!
 Serve this Steamed Orange to your family as a refreshing dessert.  You can serve it warm or chilled.  Refrigerate it if you like it chilled.
