O - Old-Time Favorite Iced Red Bean Popsicles
P - Pickles
Q - Quinoa Blueberry Mango Salad
R - Raspberry and Fig Cobbler
S - Strawberry Cheesecake Ice Cream
T - Two-Ingredient Ice Cream Bread
U - Uninvited Smashed Potatoes
V - Vegan Mango Salsa
W - Watermelon Salad
X - X'mas Coconut Wreath Cake
Y - Yellow Squash Crustless Quiche
Z - Zucchini Cake-Double Chocolate
- 1 cup red beans (washed)
- 10 cups water
- 6 pandan leaves (washed and knotted)
- 5 tbsp sugar (to taste)
- a pinch of salt
- 1 cup coconut milk (to taste)
1) Combine red beans, pandan leaves and water in a pot and boil until red beans become soft. (I took about 2 hours to really soften the red beans).
2) When the red beans is almost ready, add sugar and salt. Let it cook over low heat until sugar dissolved.
3) Turn off the heat. Add coconut milk. Stir to mix well.
4) Let it cool before transferring the dessert to your preferred containers or moulds.
5) Freeze at least 6 hours before serving.
Freeze it in your favorite moulds

Wah, Ivy! This brings back childhood memories! My grandaunts made these popsicles but using green beans. They used those long plastic bags instead of sticks. I would probably just cool the red bean soup and put in the fridge and enjoy bowlfuls of cold tong sui! So longing for something cold to cool down against the very hot weather. ReplyDeleteHi Phong Hong, yes you are right! I am supposed to use those long plastic bags for the popsicles but just couldn't get it. Am wondering whether they still sell those popsicles plastic bags. So, just made do with whatever I have. During our grandma's era, yes, we also used to have popsicles using green beans, red beans,sour plum and even Milo! My children were so delighted when I made this again. I used to make for them when they were kids too but it had been ages since then. So you should see their faces when they saw these red bean popsicles! Or often playing the roulette wheel behind the man's bike maybe win 2 or 3. I have not had this, yes....since Form 3. Must ask my 1st wife to make this, follow your recipe. Great for when watching the world cup matches too.

Hi Shane, yes, this iced red bean popsicles indeed brings back our childhood memories. We often earned some pocket money selling these ice popsicles with different flavors! I am sure your gold medal wife has no problem making this popsicles. Great to have it during our current hot weather and also enjoy it while watching the World Cup!

However, too bad, not having any durians this season as the current unbearable hot and humid weather doesn't permit me to have durians. I am very prone to sore throat and I know I would not stop eating durians if they are right in front of me!!! So, have to ikat perut first, hahaha...
