Zucchini Carrot Loaf

When I first saw Phong Hong's Zucchini bread, I told myself, wow, this is great! Why???? Well, I like zucchini and another main reason is that this recipe is healthy and so easy to make. Being so excited, I baked it the following day and I am glad that I did it without any procrastination. We like the bread/cake so much that I baked it again for a karaoke session with a group of childhood friends.
However, for this get-together, instead of a loaf, I baked it into 'cupcakes'; reason was for easy handling and besides, this is also great as party food.
The loaf is soft and moist and taste like a cake
However, the 'cupcake' is not too moist and soft and taste more like bread
Which one do you like?

Zucchine Bread
Recipe source : adapted from Phong Hong (with some minor modification)

Ingredients :
- 1/2 cup olive oil
- 200g self-raising flour
- 50g sugar (due to the addition of raisins, I reduced the sugar)
- 2 eggs, lightly beaten
- 1 tsp vanilla extract
- 1 tsp cinnamon
- 1tsp ground nutmeg
- 1 cup grated zucchini
- 1 cup grated carrot
- 1 cup of mixed raisins

Method :
1. In a large bowl, mix sugar, eggs and vanilla until well combined.
2. Stir in the grated zucchini and carrot. Then followed by the oil. Mix till well blended.
3. Sift in flour 1/3 at a time over no. 2 and mix well.
4. Add raisins, cinnamon and nutmeg.  Mix well.
5. Pour batter into a lined or greased 4" x 9" x 3" loaf pan or cupcake/muffin cups.
6. Bake in a preheated oven at 160C for 40 to 45 minutes (for loaf) or 180C for 20 minutes (for muffin or cupcake cups) or until cooked; depending on individual oven temperature.
7. Let cool in pan for about 10 mins before unmoulding onto a wire rack to cool completely.

The loaf tasted like fruit cake


Whereas the 'cupcakes' is more towards like bread


It tastes even better after one or two days

Simple Stir Fried Chinese Leeks with Tau Kua (semi-soft tofu)

My family members love Chinese Leeks.  We love it especially if stir fried it with roast pork belly.  I am sure most Malaysian Chinese  know how sinfully delectable this dish is if served with soy sauce and bird's eye chili!  It's very addictive too. Sometimes hubby and I enjoy having it just with cold beers; without rice. Whereas my children would have extra rice if Chinese Leeks is served!
 Stir Fried Chinese Leeks with Roast Pork and Hard Tofu

For a change, you can also mix and match Chinese Leeks with whatever dishes you have in mind.  
 Chinese Leeks with Swiss Mushrooms

 Fried Rice with Chinese Leeks and Apple Cubes

Simple Stir Fried Chinese Leeks with Tau Kua

Ingredients :
- 5 pcs semi-soft tofu (cubed and deep or pan fried)
- 4 Chinese Leeks (washed and cut)
- 1 pair Chinese Sausage (washed and sliced)
- 1 carrot (julienne)
- 1 thumb sized ginger (crushed)
Seasonings : (to taste)
- salt
- soy sauce
- Chinese cooking wine (Hua Tiao Jiu)

Method :
1)  Heat oil in a wok enough to deep fry or pan fry tofu.  (I prefer to pan fry).
2)  Pan fry tofu until both sides are golden brown.  Dish out and set aside.
3)  Leave about a tablespoon of oil in the wok.  Saute ginger until aromatic.
4)  Add Chinese Leeks, Chinese sausages and carrot.  Keep stir frying until all the ingredients are half done.
5)  Add salt and soy sauce to taste.  Keep stirring and if too dry, add some water.
6)  Transfer the fried tofu back to the wok. Stir and mix well.  
7)  Drizzle some Chinese cooking wine and give it a quick stir.
8)  Dish up and serve with steamed rice or plain rice porridge.
Such a palatable and aromatic dish!

Simple Stir Fried Chayote Shoots/Dragon Beard or Dragon Whiskers (龍鬚菜) with Dried Shrimps

Chayote shoots and fruits are believed to have diuretic, cardiovascular and anti-inflammatory properties. It's also said that tea made from the leaves has been used in the treatment of arteriosclerosis and hypertension, and to dissolve kidney stones.
My family eat  chayote  and its shoots from time to time.  Chayote shoots also known as 龍鬚菜 in Chinese and it means dragon's beard or dragon's whiskers.  
It's very delicious even with just simple stir fried.  I usually stir fried it with chili paste, sambal belacan and at times just a simple stir fried with dried shrimps or anchovies.  It's very yummy and my children who don't really fancy vegetables, love it.  Besides, it's very healthy and delicious too.

Ingredients :
- 1 bunch of chayote shoots (cut according to your desired length)
- 1 tbsp of dried shrimps (washed)
- 1 red chili (sliced)
- 3 cloves garlic (crushed)
- oil
-salt (to taste)
Method :
1)  Heat oil in a wok and saute garlic and dried shrimps until aromatic.
2)  Add chayote shoots and stir fry until cook.  Add water if too dry.
3)  Dish up and serve.
This simple stir fried is so healthy and nutritious

Chinese Cabbage Egg Miso Soup (Meatless Recipe)

I like Chinese Cabbage, be it stir fried, braised or soup and will never get bored eating it everyday!  Chinese cabbage is very refreshing especially if you make it into soup.  For this recipe, it's a meatless soup and I omitted anchovies stock and meat.  Hence, I added miso into it.  It's very refreshing and I had it for lunch; just the soup only and without any rice or noodles.  You can add fish balls, prawns, meat or any ingredients that come to your mind.  
Ingredients :
- 1 small Chinese cabbage (washed and cut)
- 3 dried mushrooms (soaked and sliced)
- 1/2 carrot (shredded)
- 1/2 tbsp Chinese Wolfberries/goji berries (washed)
- 2 eggs (beaten)
- 1 thumbsized ginger (crushed)
- 3 cloves garlic (chopped)
- enough water for the soup
- 1 tbsp oil
Seasonings : (to taste)
- 1 tbsp miso
- a dash of salt
- soy sauce
- pepper

Method :
1)  Heat oil in a wok and saute ginger and garlic until aromatic.
2)  Add Chinese cabbage, mushrooms and carrots.  Stir and mix well.
3)  Add water.  Cover and bring to a boil over high heat.
4)  Pour in beaten egg.  Gently stir it.
5)  Lower the heat to medium low. Add miso and Chinese Wolfberries.  Stir and mix well.
6)  Season with salt, soy sauce and pepper.
7)  Serve hot.
Simple, healthy and refreshing soup for your family

Stir Fried Da Bai Chai (Bak Choy) with Dried Shrimps and Egg

This is a very simple dish which I adapted it from Flavours from My Kampung and was surprised to see that this dish is in fact from Gunung Rapat, Ipoh, Perak. Well, since I have some bok choy in my fridge, so I decided to try this recipe with minor adjustment.

Recipe adapted from Flavours from My Kampung, page 72
Ingredients :-
- 4 stalks of da bai chai (washed and cut)
- 2 tbsp dried shrimps (washed and coarsely chopped)
- 2 eggs (beaten)
- 1 tbsp finely chopped garlic
- 1 red chili (I omitted as I didn't have available red chili on that day)
- oil
Seasonings : (to taste)
- 1 tsp fish sauce
- 1/4 sugar (I omitted this)
- salt

Method :
1) Heat oil in a wok and saute garlic and dried shrimps until aromatic.
2) Add beaten egg and scramble until set.
3) Add da bai chai and stir fry over high heat. Add seasonings.
4) Dish up and serve.


You may substitute da bai chai with choy sum/sawi

Stir-fry Bok Choy with Grey Oyster Mushroom (Meatless Recipe)

I always make it a point to have meatless meals twice or thrice a week.  I am not a vegetarian but just a bit health conscious.  So, whenever I prepared meatless meals for my family, I would make sure that the meals are nutritious and healthy.  Besides fresh veggies, tofu, mushrooms, beans, nuts, grains and legumes are my favourite for meatless meals.  Whether you are a vegetarian or just trying to eat healthier, these ingredients are packed with essential nutrients and are delicious too!

Bok choy is one of the veggies I used to cook. It is high in vitamin K which can be beneficial in the prevention of  osteoporosis, heart disease and cancer.  Besides, it is very delicious.  I stir fried it most of the time and occasionally I cooked it with noddles soup.  Here's a simple and nutritious stir-fry bok choy with oyster mushroom.

Ingredients :
- 1 packet of grey oyster mushroom (washed and torn into pieces)
- 1 big bunch of bok choy (washed and cut)
- 1 thumbsized ginger (washed and crushed)
- 3 cloves garlic (washed and crushed)

Seasonings : (to taste)
- oyster/abalone sauce or soy sauce
- salt
- Chinese cooking wine

Cooking oil

Method :
1)  Heat oil in a wok and saute ginger and garlic until fragrant.
2)  Add bok choy and give it a quick stir fry.
3)  Add in mushrooms.  Stir and mix well.  If too dry, add some water.
4)  Stir in seasonings and serve immediately.
