Japanese Vermont Curry is a curry sauce mix which my children enjoy it very much as it has a touch of apple and honey. It comes in mild, medium hot and hot. Hubby likes to stock up on Vermont Curry as it is very convenient and easy to prepare. Moreover, it comes in quite handy when we have run out of ideas what to cook or have a craving for curry.
We usually cooked it with chicken meat. Once I was very busy and asked hubby to pack food for dinner. He said he would cook for us. Of course, go ahead, dear... I was grinning from ear to ear and here is the Salmon in Japanese Vermont Curry cooked by dear hubby!
It's very easy to prepare. Even my girls can cook this too.
Ingredients :
- 2 cubes of Vermont Curry
- 1 salmon fillet (cubed)
- 2 potatoes (cubed)
- 1 cup of mixed Veggies
- 1 big onion (chopped)
- 3 to 4 cups of water (depending on how thick you want your sauce to be)
- oil
Method :
1) For this, hubby just saute some chopped big onions in a medium pot until fragrant.
2) Then, he added some cubed potatoes and mixed veggies and gave it a quick stir fry.
3) Later, he added some water just enough for the sauce and let it boil.
4) When the mixed veggies are almost cooked, he broke the curry sauce mix into pieces before adding it into the pot.
5) Cook over low heat and keep stirring until the curry cube is well mixed with the mixture.
6) Lastly, he added pieces of salmon fillets. Continue to simmer until the curry is thickened and the salmon in cooked.
7) Dish up and serve it with steamed rice.
A simple dish with added special ingredient - LOVE

DeleteHello Ivy, looks a really delicious curry dish, but this the first time I read or lern this 'Vermont curry'. Is it from US?
ReplyDeleteAnyway, I live in Canada and go fishing for salmon, but its not on my food list. For some reason or other I have not gone overboard for salmon.
Or Japanese food. Have not eaten Japanese food more than 30 years too.
You sure one heck of a gourmet cook, and looking at your pic and ingredients, looks easy a double or not triple plates of rice and a belt loosening burping dinner. I put on 50 pounds after met my wife....she too an exceptional cook and even though not a trace of Nyonya genes can cook Nyonya foods better than my Nyonya aunties...already changed 1/2 a dozen belts, ha ha ha.
Have a nice day.
Lee.
Hi Lee, thanks so much for your sweet words. I am not as good as what you think! This salmon curry is cooked by my hubby and I am only his photographer, hahaha... You are such a lucky man to have a wife who can cook excellent Nyonya foods! Thumbs up to you and your wife. Well, well, now I know what is the best present for you! Do have a wonderful day and cheers :)

DeleteHi Ivy,
ReplyDeleteI too am surprised to see a recipe with Japanese Vermont Curry. Is it from the state of Vermont in the US? I have never seen it here but I sure would like to. It sounds delicious with apples included and would be just wonderful with salmon too.
Congratulations on having a meal cooked by your husband. It sure looks like he did a tasty presentation! Who did the dishes, lol...
Thank you so much for sharing, Ivy...
Hi Louise, it's from Japan. There are 2 big cubes in a pack but my hubby used 2 cubes as my girls like the sauce very much. So, we kept a portion of the sauce for breakfast to be eaten with bread. Thanks Louise for your compliments. Yeah, he did the dishes himself too :)
DeleteI like to cook Japanese curry too..
ReplyDeleteHi Sonia, when I am busy and want something easy, Japanese curry is always my choice too :)

ReplyDeleteThis looks like a very homey and delicious dish that I would enjoy very much! Wish I could cook more often.
ReplyDeleteThanks Jeanie and have a great day ahead :)
DeleteHi Ivy, your hubby made an amazing hearty and delicious soup with the curry, and salmon. Wonder what I can substitute the Vermont Curry Sauce mix, since we don't have this here in S. Florida! Lovely photos, as well...soup is super YUMM! (just followed you on Bloglovin, I'm on there as well, just don't even know who follows me...LOL)
ReplyDeleteHi Elisabeth, thanks for your kind words and compliments. Well, you can substitute it with normal curry paste or powder with added honey and apple cubes. In fact I had tried this before too and overall the taste is still ok. Thanks for following me on Bloglovin. Will follow you too. Do take care and have a wonderful day ahead :)
DeleteI've never made my curry with salmon (usually it's leftover chicken or lamb) but I would be happy to give your husband's a try! I usually add whatever vegetables we have around and perhaps I'll try adding apple sometime (though we do use chutney and my favorite has apples in it...)
ReplyDeleteHi I Wilkerson, thanks for taking your time to drop by. Yes, you can add any available ingredients that you have. I used to to do that too, no fixed rules. Have a great day ahead :)
Deletehi! nice recipe. how thick was the sauce? last time i made curry i used 6 cubes but i want to save some for future uses without the sauce becoming too liquid. i prefer thick curry sauce
