Stir Fried Eggplant with Chili Paste

Eggplant, brinjal,  aubergine, terong or whatever it is called, is one of my favourite veggies.  Be it a simple stir-fry with taucu or miso or just with soy sauce, I just love it.  However, today I decided to cook it with homemade chili paste which my sister-in-law gave me.  It is a simple dish and yet our favourite too.


Ingredients :
 
- 3 medium-sized eggplants (sliced)

- 2 tablespoons of dried shrimps (minced)
- 2 tablespoons of Homemade chili paste
- 1  garlic clove (crushed)
- 1 piece of ginger (crushed)
Seasonings
- salt, soy sauce and sugar to taste

cooking oil



Method :

1)  Heat cooking oil in a wok.  Fry garlic and ginger until fragrant and add in dried shrimps.

2)   Add in eggplant and chili paste.  Add in water if too dry. Stir fry until soft. 

3)  Add in seasonings and stir well.

4)  Serve with steamed rice.

A simple dish but satisfying!

Homemade Orange Jam

Well, today I decided to make Orange Jam as we have almost finished the Strawberry Jam that I made earlier.  Ehmm... I am quite happy with the outcome!


Ingredients

a) 10 oranges and 1 grapefruit - wash thoroughly, remove seeds and cut into small chunks

b) 1 lemon - (juiced)
c) 2 cups of orange peels - finely sliced
d) 1 cinnamon stick
e) 3 cups of granulated sugar
f) some pandan leaves
 
 
Method :
 
1)  Blend ingredients (a).
2)  Transfer the puree to a medium-sized pot.

  
3)  Add ingredients (b, c, d and e).
4)  Cook the puree on medium low heat for about an hour or when it begins to thicken.

 


5) Add in pandan leaves and keep stirring for about 20 minutes or until it thickens.
6) Remove pandan leaves and cinnamon stick.
7) Let it cool completely before transfer to an airtight container.
8) Store in the refrigerator. It stays good for 2 to 3 weeks.

What is a 710??????


A few days ago a mechanic was having some work done at his garage. A blonde came in and asked for a seven-hundred- ten.

All the mechanics there looked at each other and another customer asked, 'What is a seven-hundred- ten?'
She replied, 'You know, the little piece in the middle of the engine, I have lost it and need a new one..'

She replied that she did not know exactly what it was, but this piece had always been there.

The mechanic gave her a piece of paper and a pen and asked her to draw what the piece looked like.

She drew a circle and in the middle of it wrote 710. He then took her over to a car just like hers which had its hood up and asked 'is there a 710 on this car?'.

She pointed and said, 'Of course, its right there.' the mechanic fainted

Empurau : The Most expensive fish in Malaysia

I received this article from a friend via e-mail :
Perhaps ikan kembong goreng crispy with sambal belacan good enough for us poor??
Or perhaps a good Tilapia or a Patin would taste better!!


A Fish Fit for the King
This is the most expensive fish in Malaysia and is only found in Sarawak. It's called the Empurau Fish and it cost RM 500.00 per kilogram. I (definitely not me, the writer) tasted the fish only once at my friend's restaurant in Selayang Jaya. Never tasted fresh water fish that good..

The picture was taken from Photo Malaysia by one of the photographers and he said that the fish weighs 25 kilograms so it means that fish costs RM12,500.00 in the market.

You may say it's crazy, but in Japan, some tunas cost a few hundred thousand dollars. And yes there are people still willing to pay for such delicacies.



Homecooked Asam Laksa

Whenever we balik kampung to my in-laws' place in Taiping, my 2nd sister-in-law, (my hubby's sis-in-law) would cook our fvourite foods such as Asam Fish, Curry Ayam, Rendang, Local kuih-muih, etc. This trip, she cooked Asam Laksa for us. It was indeed delicious and yummy yummy! My girls kept eating and eating. We could eat chunks of sardine and ikan kembung!! What a dish! I even drank the laksa soup till to the last drop. Too bad, I didn't have the recipe cos' by the time we reached her house, she had finished cooking. So, our duty was to eat and eat and EAT!!!

Sambal Petai Udang


Last week, we went back to Taiping and my 3rd sister-in-law (my hubby's sister) cooked this Sambal Petai Udang for us.  She knows that we love her Sambal Petai Udang.  San Jie, thank you!!!!  Love you <3
This is her special recipe :

Ingredients :
                          

                                 
- Petai
- Medium sized shrimps - washed and cleaned
- Ikan Bilis (anchovy) - washed
- Homemade sambal paste

Seasonings :
- 1tbsp tamarind paste + 3tbsp water, remove seeds = tamarind water
- Soy sauce to taste
- A pinch of salt

Cooking Oil

Method :
1) Deep fried ikan bilis till golden brown. Then, set aside.

2) Heat some oil in a wok. Add in homemade sambal paste. Stir fry till fragrant.
3) Add in prawns, petai and tamarind water. Mix well. Then, add in the remaining seasonings.
4) Add in fried ikan bilis and mix well.
5) Dish out and serve with nasi lemak or rice.

Natural Beauty Recipes Using Everyday Foods

1) Brown Sugar and Honey Facial Scrub
This is probably my favorite one. Brown sugar exfoliates the skin ridding the pores of all dirt, oil and dead skin cells causing blemishes. Honey is naturally antibacterial, so as the brown sugar scrubs away the things clogging pores, the honey cleans out the sources of the buildup to prevent future breakouts.

2) Coffee Grounds in Conditioner
This one is really simple. Instead of throwing old coffee grounds away, toss them into your conditioner to make your hair extra shiny. That’s all it takes!

3) Replace Conditioner with Vinegar
To get rid of the usual problems with hair: build up, dullness and just lackluster, replace your conditioner with vinegar 1-4 times a month, depending on your hair type. Just use it as you need it. And, don’t worry about buying the best stuff for the best results, common white vinegar will do the trick as well as any other vinegar.

4) Olive Oil as Hair Moisturizer
It’s easy to see how oil can moisturize your hair. It’s simple to use as well. Simply cover your hair in olive oil and leave it in for 30-45 minutes. You can also wrap it in plastic wrap to keep it from dripping. Some also believe it enhances the effect.

5) Lemon and Egg Facial
Have red splotchiness on your face? Soothe both symptoms away easily by mixing together one egg yolk and the juice of one lemon into a paste. Cover your face with it and leave it on overnight. If this seems like too much work, leave it on your face for an hour. You might not get the optimal results with this amount of time, but you will see a difference.

6) Replace Conditioner with Baking Soda
Want to be more like a guy and only use one thing to clean your hair? Then just add baking soda to your shampoo. It will remove build up and make hair shinier. And to make it even better, you can use it everyday (if you have normal hair).

7) Degrease Oily Hair With Lemons and Aloe
Mix together 1 tablespoon of lemon juice and 1/2 teaspoon aloe vera. Mix the mixture in with a normal serving of shampoo. It will get rid of your oiliness in your hair with one shower.

8) Smooth Fizzy Hair With Honey
Add a tablespoon of honey to a liter of water. After shampooing, rinse your hair with this concoction to tame your frizz.

9) Replace Face Wash With Skim Milk Powder
Switching face wash out with skim milk powder can make your face much softer and give you a smoother complexion. It’s also very gentle, so even the most sensitive can use it.

10) Moisturize Skin With Honey and Olive Oil
Honey holds moisture extremely well and olive oil hydrates well, too. Mix equal parts of olive oil and honey (and add a dash of lemon juice if you’d like) to create a pasty lotion. Rub it onto the dry skin and let it sit for 10-20 minutes. Your skin will be hydrated for plenty of time to come afterwards.

11) Soften Skin With Oatmeal
There are many concoctions and mask recipes that involve oatmeal, but you can use oatmeal by itself to help your skin. Ground up about 1 cup of oatmeal using a blender or coffee grinder, and add it to bath water to soften skin to baby-like quality.

12) Treat Chlorine-Damaged Hair
Mix together 1 egg, 2 tablespoons of olive oil and 1/4 cup of a peeled cucumber. Cover you hair with the mixture and leave it on for 10-20 minutes. You’ll see your hair return to normal almost immediately.

13) Tone and Rebuild Skin With Avocados and Carrots
This recipe can work wonders. Combine 1 avocado, 1 cooked carrot, 1/2 cup heavy cream, 1 egg and 3 tablespoons of honey. Leave on for 10-20 minutes and then rinse. These ingredients add a multitude of vitamins, antioxidants and calcium to rebuild natural collagen, tone skin and remove age spots. There is plenty to read about the benefits of each of these ingredients, but all you need to know is that each natural element does more than any store-bought item can.

14) Lemons or Oranges for Fine Hair Hairspray
Use Lemons for dry hair and oranges for a stronger hold. Chop up the entire piece of fruit in a bowl as to not lose any juice. Boil the fruit with 2 cups of water until soupy or to when the liquid has been significantly reduced. Strain through a cloth and pour into a spray bottle for use. The citrus will hold the hair and not damage it due to the fact that there is no alcohol.

15) Apple Cider Vinegar for Cleanser and Toner
This eliminates dead skin cells easily, so you can use in lieu of expensive toner. That’s all there is to it!

Papaya for Uric Acid Problem !!!


Just try it if you've got uric acid after all no harm done.
This is a really effective, just mix green papaya cubes to the ordinary green tea, my cousin-brother tried and found it very effective. I have also shared with a friend with gout to try this (his "toe joints" started to deform), after a week of drinking this formula there is significant improvement, and
after two weeks the toe joints heal and revert to normal state.It is almost three years now, the joint pain is gone, but he maintains the intake between 1-3 times monthly to avoid relapse.

Other friends suffering from years of gout problem have also recovered.

Cut green papaya into small cubes, place into the water, bring to boil, then add tea leaves, similar to the tea-making process.

Mr. Liu Qing, Chief of the Rende Town in Tainan, was suffering for years from severe stomach pain around the posterior wall of stomach.

Xu Fuchang, an experienced papaya farmer, said green papaya means to unripe papaya, where the skin is still green in colour.
Generally, the papaya takes about four months to fully mature and ripen, but the healing effect would be lost after it is fully ripe.
Green papaya should be harvested when the papaya is approximately three months old, when the fruit is still firm, and the "papaya milk" contains high papaya enzyme and other healthy ingredients.

Not only the green papaya can be used in tea drinking, you may also cut them into cubes, and boil with the ribs, or even slicing the green papaya into fine long pieces and fried with garlic, very tasty, and no adverse effects on the human body.

Natural Home Remedies for Bladder Infections


Millions of women will suffer from a bladder infection—also know as a urinary tract infection or cystitis—in their lifetime, and many will suffer from repeat infections. Although men can get urinary tract infections as well, 90 percent of those affected are women. Blame it on anatomy; the urethra, the tube which transports urine and connects the bladder to the outside world, is shorter in women than it is in men and is also located in close proximity to both the vagina and anus, making it easy for bacteria to enter the urethra and infect the bladder.

Cystitis symptoms are no walk in the park. When the bladder is infected, its lining becomes inflamed, creating the feeling of an urgent need to pee all the time. Urination is accompanied by pain and burning, and often the bladder doesn’t completely empty, leaving the person again with the constant need to pee.

E. coli bacteria are the most common cause of bladder infections, and they can get there through a number of circumstances. Being sexually active can increase the risk of contracting a bladder infection as bacteria from the vagina can be massaged into the urethra during intercourse. Certain forms of birth control can also increase risk. If not fitted properly, diaphragms can put pressure on and bruise the bladder, increasing its chances of infection; the chemicals in spermicidal forms birth control can also upset the levels of good bacteria in the vagina and urethra. Menopause puts women at a higher risk as well; decreased estrogen levels can change the urinary tract during menopause, leaving it vulnerable to infection.

Cranberries prevent bacteria from sticking to the bladder wall and starting an infection. 


Antibiotics are also a leading cause of urinary tract infections, especially repeat infections. Most women with a bladder infection will be prescribed antibiotics as treatment, but because antibiotics kill off all bacteria in the body, both good and bad, they inhibit the body’s natural means of staving off infection. Bypass the antibiotics and treat your bladder infection naturally with these seven natural home remedies.

Cranberry juice: 
This well-known home remedy for bladder infections has earned its stripes. Studies have shown that cranberry juice prevents bacteria from latching onto bladder walls and starting an infection. Drink at least one glass daily to prevent a bladder infection, or several glasses a day if you already have an infection.

Water: 
It’s essential to drink as much water as you can when suffering from a bladder infection. The more water you drink, the more you’ll have to pee, and the faster your body can flush the bacteria out of your system.

Vitamin C acidifies urine and inhibits the growth of bacteria in much the same way as cranberry juice. Vitamin C can also enhance immune function to help fight off an existing infection. Take 1,000 mg four to five times daily.

Baking soda can neutralize acidic urine and help ease the burning sensation associated with bladder infections. Mix ½ teaspoon baking soda into a glass of water and drink.

Garlic and oregano oil both have strong antibacterial and antiviral properties that make it beneficial when fighting an infection. Garlic has more medicinal properties when eaten raw. Take 500 mg of oregano oil four to five times daily.

Probiotics: 
If you’re already taking antibiotics for your bladder infection, supplement your diet with probiotic-rich foods (or capsules). These friendly bacteria can prevent harmful bacteria from growing and can reduce your chances of a repeat infection.

Additional tips:

• Don’t hold it! If you gotta go, you gotta go. Holding urine in can back up bacteria in your system.

• Wipe front to back so as not to smear bacteria into the urethra.

• Avoid coffee, tea, alcohol, soft drinks and other beverages that may contain citrus juices and caffeine, which can irritate your bladder and increase the need to pee.

Originally native to southern Mexico and now cultivated in many tropical countries (including Brazil ,India , Indonesia , South Africa , Vietnam and Sri Lanka ), the papaya plant has been touted by traditional healers for centuries as a source of powerful medicine. Not only is papaya fruit delicious and loaded with vitamins and phytochemicals, but other parts of the plant have been used historically to treat health problems too.

Now University of Florida (UF) researcher Dr. Nam Dang and his colleagues inJapan have announced new evidence that the papaya fights cancer cells. In fact, they discovered that an extract made from dried papaya leaves produced a dramatic anti-cancer effect against a broadrange of tumors grown in the laboratory — including cancers of the cervix, breast, liver, lung and pancreas.
The study, recently published in theJournal of Ethnopharmacology, not only showed that papaya has a direct anti-tumor effect on a variety of malignancies, but it also documented for the first time that papaya leaf extract increases the production of key signaling molecules called Th1-type cytokines.

That’s important because this regulation of the immune system raises the strong possibility that the use of papaya could help the body’s own immune system to overcome cancers. In addition, it suggests papaya could be helpful in treating or preventing other health problems such as inflammation and autoimmune diseases.

The research team found that papaya’s anti-cancer effects were strongest when cancer cells received larger doses of the papaya leaf extract — yet, unlike many mainstream cancer therapies, there were no toxic effects at all on normal cells.

In a statement to the media, Dr. Dang pointed out that the ability of papaya extract to stop cancer without toxicity is consistent with reports from indigenous populations in Australia and in his nativeVietnam .
“Based on what I have seen and heard in a clinical setting, nobody who takes this extract experiences demonstrable toxicity; it seems like you could take it for a long time — as long as it is effective,” stated Dr. Dang, who is a professor of medicine and the medical director of the UF Shands Cancer Center Clinical Trials Office.

In all, the UF scientists exposed 10 different types of cancer cell cultures to four strengths of papaya leaf extract.When they measured the effect of the extract after 24 hours, the papaya had slowed the growth of tumors in all the cultures.

What exactly does papaya do to halt malignancies? To find out, the researchers focused on a T-lymphoma cancer cell line. They discovered that at least one of the mechanisms that makes papaya extract a potent anti-cancer weapon is the natural compound’s ability to cause malignant cells — but not normal ones — to die.

The researchers hope to follow up these experiments by eventually testing the papaya cancer treatment in animal and human studies. Up next for Dr. Dang and his colleagues: they’ve applied to patent a process to distill the papaya extract through the University of Tokyo and they are working to identify all the specific compounds in the papaya extract that are active against cancer cells.

To this end, Dr. Dang has partnered with Hendrik Luesch, a UF Shands Cancer Center professor of medicinal chemistry who is an expert in the identification and use of natural products for medical purposes. Dr. Luesch recently discovered yet another natural cancer fighter — a coral reef compound that blocks cancer cell growth in cell lines.

Papaya Leaf Papaya Tree

Papaya/Pawpaw apaya (Carica papaya) originates from tropical American
countries. Today Papaya is cultivated in most tropical countries around the
world.

The Papaya with the Latin name carica papaya is called Paw Paw in Australia and New Zealand . This is in no way related to the Paw Paw in North America that has the Latin name asimina tribola, though both are medicinal plants.
Papaya leaf juice is claimed to have reversed cancer in many people living on
the Gold Coast in Australia . Harold W. Tietze in his book Papaya The Medicine Tree, describes how to make the juice and tells the stories of many cancer survivors who reportedly used the juice to get rid of their cancer.

The book contains the the following report that was published in the Gold Coast Bulletin. "PawPaw Cancer Plea Bears Fruit". Gold coast gardeners have responded to an appeal by cancer victims desperate to find supplies of pawpaw leaves. And the Gold Coast man who, 14 years ago, first exposed the leaves as a possible cure for cancer has been tracked down to a Labrador (Gold Coast) nursing home.

The story of how Stan Sheldon cured himself of cancer by drinking the boiled
extract of pawpaw leaves was first told in the Gold Coast Bulletin in 1978.
Now research in the United States has given scientific support to his claim,
isolating a chemical compound in the pawpaw tree which is reported to be a
million times stronger than the strongest anticancer drug.

Mr Sheldon, says the discovery does not surprise him. "I was dying from cancer in both lungs when it was suggested to me as an old Aboriginal remedy" he said. "I tried it for two months and then I was required to have a chest x-ray during those compulsory TB checks they used to have. They told me both lungs were clear." "I told my specialists and they didn't believe me until they had carried out their own tests." "Then they scratched their heads and recommended I carry on drinking the extract I boiled out of the papaw leaves."

That was in 1962. The cancer never recurred. Since then Mrs Sheldon has passed the recipe onto other cancer victims. "Sixteen of them were cured," he said. Mr Sheldon's involves boiling and simmering fresh pawpaw leaves and stems in a pan for two hours before draining and bottling the extract. He said the mixture could be kept in a refrigerator though it may ferment after three or four days."

"One man has been growing papaws and giving away the leaves to cancer victims ever since he read the Bulletin's original 1978 story about Mr Sheldon. "I have no doubt that it works," he said. "I know people walking around now who should have been dead according to their original cancer diagnosis. But the pawpaw treatment helped them to beat the cancer."

The recipe is as follows:
Wash and partly dry several medium-size papaya leaves. Cut them up like cabbage and place them in a saucepan with 2 quarts/ litres of water. Bring the water and leaves to the boil and simmer without a lid until the water is reduced by half.

Strain the liquid and bottle in glass containers.

The concentrate will keep in the refrigerator for three to four days. If it
becomes cloudy, it should be discarded.

The recommended dosage in the original recipe is 3 Tablespoons/ 50ml
three times a day. It is recommended to read Papaya The Medicine Tree for the interesting stories of "incurable" people who have used this extract to beat
their cancer, and for other medicinal uses of papaya.

A letter from R.J.W.:

"… I was inspired to send some leaves to a few people dying from cancer. The first, a banana grower aged 40, had two operations on his bladder for cancer which did not prevent metastasis. I placed him on a very simple diet consistingof zero junk food,fresh living food with no preservatives, white flour, sugar,colorings or additives and told him to "stuff a handful of pawpaw leaves into a saucepan and fill with water. I would like to share this interesting discovery from a classmate's son who has just recovered from dengue fever. Apparently, his son was in the critical stage at the ICU when his blood platelet count drops to 15 after 15 liters of blood transfusion.
