Spicy Onions Tomato Prawns

This is another simple prawns dish with onions and tomatoes.  Hope you all like it.

Ingredients :
- 750gm medium sized prawns (deveined and marinated with pepper and salt)
- 2 ripe tomatoes (washed and cut into wedges)
- 2 big onions (peeled, washed and sliced)
- 1 whole garlic (finely chopped)
- 1 thumb sized ginger (washed and crushed)
- 1 1/2 tbp cili paste (I used Homemade Chili Paste)
Seasonings : (to taste)
- salt
- pepper (for marinate)
- soy sauce
- sugar
- 1/2tsp apple cider vinegar
Method :
1)  Heat enough oil in a wok.  Lightly deep fry marinated prawns and set aside.
2)  Leave about 1 tbsp oil in the wok.  Saute ginger and garlic until aromatic.  
3)  Add onions and fry until soft.  
4)  Then add tomato wedges and chili paste.  Stir and mix well.
5)  Season with salt, soy sauce, sugar and apple cider vinegar depending on your taste.
6)  Return the fried prawns to the wok and mix well.
7) Serve hot with steamed rice.

Steamed Chinese Pomfret with Fragrant Shallots

I love to steam fish with shallots.  So, usually I am the one and sometimes my hubby would finish all the shallots.  However, my children would not touch the shallots!  They only go for the fish and the sauce!  The sauce is great and my children like to mix it with steamed rice.

This is a very simple steamed fish with shallots and it's very yummy.

Ingredients :
- 1 Chinese Pomfret (marinated with salt and pepper)
- some shallots - (washed and peeled)
- 1thumb sized ginger (washed, finely sliced)
- Spring onions (washed and cut)

Seasonings : (to taste)
- salt
- pepper
- soy sauce
- 1tsp Chinese cooking wine (Hua Tiao Jiu)
- 1/2 tsp sugar
- 1/2 tsp sesame oil

Method :
1)  Heat 1 tbsp of oil in a wok.  Quickly fry shallots in high heat and dish out.  Turn off the heat. Put aside.

2)  Lightly fry the the ginger and spring onions without the heat as the balance oil from frying shallots is still hot.  Dish out.

3)  Boil water for steaming.

4)  Arrange some fried shallots, ginger and spring onions on the steaming plate.  Then, place the fish on top. 

5)  Add the remaining ingredients (fried shallots, ginger and spring onions) on top of the fish.  

6)  Mix the seasonings and pour onto the fish.

7) Steam at high heat for about 13 to 15 minutes depending on the fish.

8)  Serve immediately with steamed rice
The gravy is very yummy!

Simple Steamed Chinese Pomfret with Soy Sauce

This is another simple steamed fish with soy sauce unlike the previous post where I steamed it with Shiitake mushroom.  Simple, fast and healthy... :)

Ingredients :
- 1 Chinese pomfret (washed and marinated with salt and pepper)
- 1 whole garlic (peeled the pips but do not crushed)
- 3 shallots (washed and finely chopped)
- 1 thumbsized ginger (washed and finely sliced)
- 1 stalk spring onion (separate the white stems and the leaves and cut)
- 1 stalk coriander leaves (washed, separate the stems and the leaves and cut)
- 1 red chili (washed, de-seeded and finely sliced)
Seasonings : (to taste - mix all except the wine)
- salt                     
- soy sauce           
- pepper               
- 1 tsp sugar         
- 1 tsp sesame oil 

- Chinese cooking wine

Method :
1)  Heat oil in a wok.  Saute ginger, garlic, shallots, stems of spring onions and coriander until aromatic.
2)  Dish up and place some on the steaming plate.  Then, place the marinated fish on top.
3)  Add the remaining fried ingredients on top of the fish.
4)  Meanwhile boil water in a steaming wok or pot for steaming.
5)  Pour the mixed seasonings onto the fish.
6)  When the water is boiled, steam fish at high heat for about 10 minutes.
7)  Add Chinese cooking wine, the remaining spring onions, coriander and red chilies.
8)  Cover and steam again  for another 3 to 5 minutes.

9)  Serve hot.

Simply Beautiful and Healthy Living is 1 year old and Simple Sweet Sour Prawns

Time really flies...  Simply Beautiful and Healthy Living is 1 year old today!  It has been exactly 12 months since I set up this simple humble blog of mine!  Oh... I just can't believe I can go this far! Hehehe..

I am proud to say that I have learned a lot from being a non-blogger to a blogger.  I still consider myself a new blogger cos' there are still rooms for improvement.  Initially my intention to have a blog is to post everything that concerns healthy lifestyle.  As time goes by, I started to share my recipes.  All my recipes are very simple and I find joy in sharing even though they are just  very simple and common dishes.

There is still one thing which I really hope that I have enough time  - to take beautiful and creative photos of  yummy foods cook by me!.  You see, most of the time whenever I cooked a dish and wished to share with my readers, I just grabbed the camera and started to click without actually aiming for a good shot.  I am sorry  I usually did it in a haste.  I regret that I don't have time to do all these.  Well, I promise myself that once I have ample time, I would do nice shots of those recipes that I am sharing.    Give me some time.... and I will do it!!

Another thing is that if you are constantly following my blog publicly or silently, you would realise that I don't have any baking recipe!  Yes, you are right!  When comes to baking, I am hopeless.  I also promise myself that I would learn baking when I have time and  if one day you do see my 1st baking recipe here, than you are sure that I have taken my first step in baking and am proud to share it with my dear readers.  Tell you what... I have all the baking tools from oven to pans, but all are for show only! So ashamed to admit this!  They are either still brand new (even though have been standing there for years), nicely packed in the store room or either have been used once or the most twice only!!!  

I would like to say a BIG THANK YOU to all my readers who have taken time to visit my blog.  Furthermore,  every single of your comment is being appreciated.  Without you all, I can't be here.  As at today, my page viewers have reached 29,982 and I am indeed pleased with the results.  Of course I can't compare with those experienced bloggers who have readers over hundreds thousands or even millions!  I really admire them!  I wouldn't be here today unless  someone out there bothers to visit my humble blog every once in a while. With that in mind I would really  like to thank each and everyone who follows my blog. It is indeed satisfying to see the readership and page views increasing each day. Last but not least,  I really appreciate it when a total stranger who cares to take some time to stop by, pays my humble blog a visit and give comments; especially with so many other super quality blogs around.  Once again, A BIG THANK YOU!!!! :)

Ok, enough about my bragging...  To celebrate the 1st anniversary of Simply Beautiful and Healthy Living, here is a dish I would like to share with all my dear readers.  Hope you all like it! :)

Ingredients :
- 500 gm big prawns (cleaned and de-veined, marinated)
- salt (for marinate)
- pepper (for marinate)

Sauce : (to taste)
- 1 thumbsize ginger (washed and finely chopped)
- 1 tbsp garlic (finely chopped)
- spring onions (cut)
Sauce Mixture :
- 1/2 cup tomato ketchup
- 1/2 cup chili sauce
-1 tsp apple cider vinegar
- soy sauce (to taste)
- salt (to taste)
- sugar (to taste)

Method :
1)  Heat oil in a wok.
2)  Lightly deep fry marinated prawns and set aside.
3)  Saute spring onions, ginger and garlic until fragrant.
4)  Add sauce mixture and stir.
5)  Add in fried prawns and mix well.
6)  Dish out and serve hot.

Steamed Chinese Pomfret (Tau Tai) with Shiitake Mushroom

 
This is one of the dishes I cooked on the 6th day of Chinese New Year for my friends.  It is simple and delicious.

Ingredients :
-1 pomfret (cleaned and marinated with salt and pepper)
- shredded shiitake mushroom
- shredded carrot
- some Chinese Wolfberries (Kei Qi)

Seasonings : (mix all together)
- a dash of salt
- 1 tbsp soy sauce
- 1 tsp sugar
- 1 tbsp of rice wine
- 1 tsp sesame oil
- 1 tbsp chopped garlic
- shredded ginger

Garnishing :
- stalk spring onion (cut)
- 1 red chili (thinly sliced)

Method :
1)  Boil water in a steaming pot/wok for steaming.
1)  Place few shredded of ginger and spring onions on a steaming plate.  Then, place fish on top.
2)  Add shredded mushroom, carrot and Chinese wolfberries on top of the fish.
3)  Pour mixed seasoning on it.
4)  Once the water is boiled, steam at high heat for about 12 - 15 minutes until cooked.
5)  Garnish with the remaining spring onion and red chili and serve hot.

King of Soy Sauce Prawns


Prawns symbolize happiness for Chinese especially when it is cooked during Chinese New Year. When pronounced in Cantonese, it is “haa” which of course sounds like laughter! So, let's ha...ha...ha...ha... over this King of Soy Sauce Prawns which I adapted it from Nasi Lemak Lover. I cooked this yesterday; the 6th day of Chinese New Year when my good friends came to visit me.


Ingredients :
- 1Kg large prawns (cleaned and deveined)
- 1 bowl of cloves garlic (minced)
- 2tbsp of light soy sauce (to taste)
- thick caramel sauce (to taste)
- 2tsp sugar (to taste)
- 1 small bowl of dried shrimps (washed and minced)
- Few stalks of spring onion (washed and cut into 1" length - separate the white part and green part))
- 1 red chili (washed and shredded)

Method :
1. Heat oil in a wok over high heat. Saute garlic, dried shrimps and white part of spring onion till fragrant.

2. Add in the prawns and give it a quick toss. Then, add in light soy sauce and sugar, mix well and give another quick stir.

3. Then, add in green onions, mix well and dish out.

4. Garnish with shredded red chili and serve hot.

Pan Fried Siakap (Barramundi/Asian Seabass) with Sambal (Chilli Paste)



I usually prefer to steam fish as it is healthier than deep fried fish. However, sometimes when we do crave for fried spicy fish, then I would use my HappyCall Pan to grill or pan fry the fish instead of deep frying. This way, it is not oily and healthier too.

Pan Fried Siakap with Sambal is very easy to prepare. You can use any fish you like such as mackerel, sardine, etc.

Ingredients :


- 1 fresh Siakap (cleaned, slit across and marinated with salt and chilli paste)
- 1 tbsp of shredded ginger
- 3 tbsp of homemade chilli paste
- 1/2 tsb of salt (for marinate)
- 2 tbsp of cooking oil (if you use wok/skillet, then you need enough oil for deep frying)

Method :



1) Heat oil in a pan. Place marinated fish and shredded ginger on the pan.

2) Close the lid and pan fry both sides until aromatic and cooked.

3) Dish out and serve with calamansi juice.

Pan Fried Salmon with Fennel and Coriander Powder

This is a simple pan fried salmon fish with fennel and coriander powder as I wanted to have a try with these 2 spices and see what it taste like. Well. frankly speaking, I think I still prefer Simple Pan Fried Salmom with Dried Basil. Overall, it is still not bad lah if served with some lemon juice, :)
Should you want to give this a try, here is the recipe. Who knows maybe you like it?  Do let me know whether you like or not; if you ever give this a try ^_^

Ingredients : (No exact measurement) 

- 2 pcs of salmon fillet (washed and marinated with seasonings)
- 1 thumbsized of ginger (washed and crushed)
- 1 tsp of butter

Seasonings : (mixed) 

- 1/2 tsp of fennel powder
- 1/2 tsp of coriander powder
- salt
- pepper

- soy sauce (before dish out)

 

Method :

1) Melt the butter in a wok or pan. (I used HappyCall pan).

2) Add ginger and pan fry both sides of the marinated salmon fillets until fragrant.

3) Drizzle some soy sauce before dish out.

Serve with some lemon juice on top of the cooked salmon. Hope you like it :)

Simple Pan Fried Turmeric Fish

I like to eat fried fish but not deep fried.  As such, whenever I want to fry fish, I usually use Happy Call pan to pan fry it.  Besides, it is so easy and convenient to use; it's non-stick and healthy as I use very little oil to pan fry.  Most of all, it is easy to clean, smoke free and no oily kitchen stove and floor!!

For this post, I have pan fried turmeric fish using Happy Call pan.

Ingredients :

- 3 ikan selar or Scad (cleaned and marinate with salt and turmeric powder)
- 3 sprigs of curry leaf
- 2 tbsp of turmeric powder (to marinate the fish) to taste
- salt (for marinate) to taste
- 1 thumb sized ginger (cleaned and crushed)
- Soy sauce
- Oil

Method :

1)  Grease oil in the pan.  Then, place fish, ginger and curry leaves into the pan.

2)  Close the lid and pan fry on both sides until cooked and brown.  Add soy sauce on both sides of the fish and pan fry for while.

3)  Dish out and serve with sambal kicap.








It is simple and yet delicious!!
